I thought I’d share some photos of stuff that’s going on in my home.

I made some Khao Thom Gai, which literally translates into “Chicken Boiled Rice”, on Saturday morning. It’s one of my favorite homemade dishes and I think it tasted pretty close to how my mom makes it. I made the broth from scratch, poured it over some cooked rice, and topped it with some salty preserved cabbage, fresh cilantro leaves and homemade fried garlic oil to give it an authentic flavor. Yum. The photo above also features one of the three small square dishes that Holly bought for me…so cute.

I also bought a garden bunch of purple tulips at Costco on Thursday, which have started to open this weekend. Since Spring is just around the corner, I thought I’d freshen up our home with some color.

Sunday Supper

We had The Bangs and Sokok-Juns over for Sunday Supper last night.  Jes prepared some good old fashioned meat and potatoes in the form of pot roast over mashed potatoes and a side of veggies.  It’s always fun to share food and wine with friends and we did just that.

Had some dim sum this morning and the chili pepper sauce label was very appealing to me. The sauce was also very tasty.

Ice Cream Sammiches

At work, we celebrate everyone’s birthdays by drawing names out of a hat. It was my turn to prepare birthday dessert for the birthday person last week so I decided to make ice cream sandwiches. The birthday girl loves mint chip ice cream so this was perfect. On Thursday night, I baked 24 round chocolate cookies and packed them up in a shoebox. Of course I had to have a sample and the cookie came out nice and chewy but strong enough to hold the ice cream.

On Friday, I set up a cookie/ice cream bar for all to enjoy. Unfortunately, by the time I served them, the cookies were a little on the hard side. Everyone seemed to still enjoy the special treat but they could have just been very convincing. Regardless, I think the birthday girl enjoyed her treat. I have an idea for how to tweak the recipe a bit so I’ll be making another batch soon. Once I get it right, I’ll make sure to share the recipe.

Michelle and Ryan are hosting a pie party this afternoon so I decided to bake a traditional apple pie. I actually made the crust from scratch and I LOVE the new French rolling pin that I bought last weekend. Next came the apple filling, which was covered with the top crust and a sprinkling of cinammon and sugar, and then I “put it in the oven for baby and me”. (Haha – that’s a line from “Patty Cake” in case you didn’t know.)

When it came out, it was golden brown and still bubbling inside. In fact, as I was admiring my creation, I noticed that there were little spirals of steam coming out of the vents I cut and thought, “Wow! It’s just like in the cartoons!” All I needed was an open window sill for Tom and Jerry to steal it. So, the final test is this afternoon when I cut it open and serve it to my friends. I also made my Mommy’s Famous Cheesecake as back-up but hopefully they’ll both be winners.

I’ve gotten into the habit of eating a big hearty bowl of oatmeal each morning at work.  The rehab department is located just next door to the cafeteria so it’s very convenient.  I’m just amazed at how cheap some items are and how much more expensive it is for other items.  For example, my oatmeal with brown sugar and raisins (with the 10% employee discount) is only 72 cents.  But if I want a crossaint sandwich, it’s $3.78! It’s not a ridiculous price but it’s significantly more than my daily oatmeal.

The other day I was feeling pretty grumpy in the morning and the oatmeal was looking especially sticky.

So, I skedaddled to the grill area to check out what else I could get.  I decided to treat myself to some made-to-order french toast and a sausage patty.  Not only was it yummy but it costed me only $1.50!!!  I was so pumped and enjoyed 5 minutes of sitting at my desk with a knife and fork, happily eating my yummy (and cheap) breakfast.
